Halloumi Chicken Schnitzel Burger

Think german classic with a cheesy twist, topped with burger buns!

Ingredients

​

2 chicken breasts

1 egg

80g halloumi (grated)

30g flour

50g bread crumbs

200 ml vegetable oil

1 Tbsp dried thyme

1 tsp tumeric

4 buns

Salt, Pepper, Cayenne pepper

Lemon slices

Toppings like salad, cucumber, onion, tomatoe

 

 

Method

​

  • Cut the chicken filets horizontally, so that 2 thin filets appear. This may take some practice.


  • Place some clingfilm over the chicken and flatten the chicken with a kitchen hammer.


  • Season the chicken with Salt, Pepper and a good amount of Cayenne pepper.


  • Mix the grated halloumi with the bread crumbs, thyme and tumeric.


  • Brake the egg into a deep plate and give it a little mix.


  • Put the chicken schnitzel first into, flour, then the egg wash and then into the breading to get them all covered.


  • Put a large pan on medium high heat.


  • Once the pan is hot, add the vegetable oil.


  • Add some additional touch of breading into the oil and see if it bubbles immediately. If yes, the oil is hot enough.


  • Fry the chicken schnitzels from both sides until golden brown.


  • Take the schintzels out on some kitchen paper to drain the additional oil.


  • Drizzle some lemon juice over the chicken.


  • Place the Schintzel on some buns and put your favorite toppings on.

Good to know

Try rather softer bruger buns, than crusty breads. Make sure your vegetable toppings are nice and crunchy, as the chicken is usually very soft. !!! - Don't use that big amount of oil! the halloumi schnitzel might not need to swim in fat, as the halloumi covers the meat and the halloumi gets really really delicious when it has some black spots - !!!
