IKEA Meatballs
Everyone loves IKEA, this is our take on their meatballs dish.

Ingredients
Mashed Potatoes
700g potatoes
200ml milk
50g butter
Nutmeg, to taste
1/2 tsp garlic powder
Meat balls
400g minced meat (50:50 beef, pork)
1/2 small white onion
2 garlic gloves
1 egg yolk
3 Tbsp milk
50g breadcrumbs
1 Tbsp fresh parsley (finely choped)
1 Tbsp olive oil for frying
Sauce
2 Tbsp olive oil
40g butter
40g plain flour
400ml vegetable broth
150ml cream
3 tsp soy sauce
1 tsp dijon mustard
Method

Mashed Potatoes
Peel and cut the potatoes into chunks and place in a pot of water to boil. Time for potatoes to cook will vary based on size. Check with a fork or skewer from time to time if cooked. While the potatoes are boiling you can work on the meatballs and come back to create the mash.
Once you're ready to make the mash: Drain the potatoes and place in cold water to cool down. This helps remove some starch and create a less sticky mash.
Place the cooled down potatoes in a large mixing bowl and start mashing, trying to get a smooth consistency without large lumps.
Place the mashed potato back in the pot and turn the heat to low. As it is warming, add the butter and milk and mix together.
Season generously with salt, pepper, nutmeg and garlic powder.
Place lid back on top and let sit warm, mixing from time to time until ready to serve!
Meatballs
Place all ingredients for the meatballs in a large mixing bowl and season generously with salt and pepper.
Mix the ingredients together until the fat in the meat starts to get stringy. We recommend using your hands!
Form ~ 15 golf ball sized meatballs, place on a plate and set in the fridge for at least 15 minutes (the longer the better!). While these sit, we can work on the sauce.
Once you have your sauce and mashed potatoes completed, place a pan on medium-high heat and add olive oil to pan for frying (usually recommend a 1 Tbsp for half the batch). Add meatballs to pan and fry, ensuring you flip them to ensure they are evenly cooked all around.
Sauce
Melt the butter in a small pot on medium heat.
Add the flour, mix together and let the mixture brown.
Add all the broth and mix thoroughly ensuring there are no lumps.
Next, add the double cream and bring the sauce mixture to the boil.
Once boiling, reduce the heat to low to allow the mixture to simmer. At this point you can add the soy sauce, mustard, salt and pepper.
Let it sit warm on the low heat, adjust the seasoning to your taste. As you prepare the remaining parts of the meal, make sure to stir from time to time and add water if the sauce gets too thick for your liking.
Good to know
Be extra generous with the salt and if the minced meat is fresh you should be good to taste the raw mixture to make sure there is enough seasoning. Add cayenne pepper in the meatballs if you prefer them spicier. It is also hard to get them evenly browned from all sides so really try to roll them around in the pan. The good news is we created this recipe to avoid the meatballs falling apart when cooking! Make sure the pan isn't too hot when frying the meatballs, this can cause dark spots and therefore not look evenly cooked.
