Mushroom Burger
An ode to our town - renowned for their smokey beer.

Ingredients

For the mushroom patties
300g mushrooms (sliced)
2 Tbsp olive oil
1 red onion (finely diced)
4 cloves garlic (very finely diced)
100g gouda (grated)
100g goat cheese
50ml white wine
For the beef patties
500g minced beef
1 small red onion (finely chopped)
2 garlic gloves (finely chopped)
100g smoked bacon (diced in small chunks)
4 Brioche buns
Salad, Mayo, Mustard, Tomato, Pickles... to taste and top!
and some 2x Ploughman Sandwich Onion Jam
Method

Put a pan on medium-high heat and add the olive oil.
Fry the mushrooms until they get slightly brown and then add the onions and the garlic.
Fry another 3-4 minutes and add the white wine and the gouda
Stir the mix while the alcohol is evaporating to get a creamy mushroom paste
Season with salt, pepper and parsley
Take the pan of the heat and form 4 patties out of the mushroom cheese paste
Place them in the fridge for 30 minutes so they get nicely firm

Good to know
Use the standard pattie recipe from the BamBurger, use 2x the amount of the onion yam from the ploughman sandwich. Add the mushroom pattie on top of the beef patty and put it into the oven for 5 minutes. Next time: Try normal burger buns and add the goat cheese last, so it is separated from the other ingredients.
