Sweet potato fries

Ingredients

  • 2 big sweet potatoes (peeled)

  • 3 Tbsp corn starch

  • Salt

 

 

Method

  • Cut the sweet potatoes into 1x1 cm thick fries. Take your time in this step! It is very important, that all fries have the same thickness to cook evenly. Undercooked fries will not be crispy and overcooked fries will get bitter.


  • Place a large pot with a lot of water on the stove, add 4 Tbsp of vinegar and bring it to boil. Cook the fries for 6 minutes. The reason for the large pot is to increase the temperature in the fries as rapidly as possible.


  • Take the fries out and place them into a bowl with 1 liter of cold water and 2 Tbsps of corn starch or potato starch. Let the fries soak up some of the starch, so they get more crispy. Let them sit for one hour.


  • In a new bowl, add 2 Tbsp of sesame oil and 2 tsps of smoked paprika powder (or any seasoning you like) and mix the fries in, so that they are evenly coated.


  • Place the fries on a wire tray and make sure they are not touching each other. Again, take your time in this step.


  • Now place the tray into a 250°C preheated ventilator oven and let them bake for 25-35 minutes. The fries shall be browned but not black. Actually try to produce as little black spots as possible.


  • Take the fries out into a bowl and season genorously with salt.


  • Serve quickly!

Good to know

The challenge with oven baked sweet potato fries is, that the fries don't contain enough starch and starch is what makes things crispy. On top, there are chemical processes ongoing that transform some of the starch into sugar, if the fries cook to slowly. Just adding starch from the outside is not enough. The starch needs to be inside the fries.
